Griddle-Baked Biscuits & Gravy Welcome to my family’s Griddle-Baked Biscuits & Gravy recipe! This is the perfect Southern comfort food that’s sure to delight your taste buds and keep them coming back for more.

For a slightly different flavor, you can make a creamy version of this dish by substituting heavy cream and solid rather than mashed potatoes for the gravy. Fried onions also make a flavorful alternative addition that can be cooked in the sausage and added before the gravy.

Here is what you need to make this dish:

For the biscuits:
2 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
8 tablespoons cold, unsalted butter, diced
3/4 cup whole buttermilk

For the sausage gravy:
1 pound uncooked ground pork sausage
2 tablespoons all-purpose flour
3 cups whole milk
3 tablespoons unsalted butter
1/2 teaspoon salt
1/4 teaspoon ground black pepper

Fresh chives for a garnish

Now, let’s get started!

For the biscuits:
1. Preheat a griddle or lightly greased skillet over medium heat.

2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

3. Using a pastry blender, cut in the butter until the mixture resembles a coarse meal.

4. Make a well in the center of the biscuit mixture and pour the buttermilk into it. Using a fork, stir the mixture with the buttermilk until just combined.

5. Drop the biscuit dough into the preheated griddle and cook for about 4 minutes per side, or until golden brown.

For the sausage gravy:
1. In a large skillet, cook the sausage over medium-high heat, frequently stirring, until the sausage is browned and fully cooked.

2. Stir in the butter, flour, salt, and pepper, and continue to cook and stir the mixture for a few minutes until the flour taste has cooked out.

3. Slowly add the milk to the mixture, stirring constantly. Increase the heat to medium-high, and bring the mixture to a simmer, stirring constantly.

4. Reduce the heat to low and simmer the gravy, occasionally stirring, until it is thick and creamy.

To assemble:
1. Place a couple of biscuits on a plate.

2. Top the biscuits with the sausage gravy.

3. Sprinkle fresh snipped chives over the top for a finishing touch.

4. Serve and enjoy!

Helpful hack: If you find yourself short on time, you can easily cook the sausage gravy in the microwave by following the same instructions as above.

Tips and Suggestions:
1. For a slightly spicier version, add a pinch of cayenne pepper, red pepper flakes, or hot sauce to the sausage gravy.

2. Serve this dish with a side of scrambled eggs and crispy bacon for a full breakfast meal.

3. If you have any leftover biscuits, wrap them in foil and keep in an airtight container in the refrigerator for up to a week. To reheat, just pop in the oven or toaster oven at 350 degrees for 7-10 minutes.

Enjoy your Griddle-Baked Biscuits & Gravy! Let me know if you loved it as much as my family does.
