Griddle-Baked Blueberry Cobbler Welcome to the amazing world of griddle-baked cobblers! Alternatively, if you’re looking for something a little more tart, you can use raspberries or blackberries and top with a freshly-made Lemon Curd.

Ingredients:

-1 cup all-purpose flour
-1/4 cup granulated sugar
-2 tablespoons white sugar
-1/4 teaspoon salt
-3/4 teaspoon baking powder
-3 tablespoons cold butter, cut into small cubes
-1/3 cup (plus extra for brushing) milk
-2 cups fresh or frozen blueberries
-2 tablespoons butter, melted

Directions:

Preheat oven to 375F (190C).

In a medium bowl, mix together the flour, sugar, salt, baking powder and butter until it resembles a coarse meal.

Stir in the milk to form a dough.

On a lightly floured surface, knead the dough a few times then roll out into a circle and press into a 8″ x 8″ baking pan (or other small baking pan).

Add the blueberries to the top of the dough and press in slightly.

Carefully brush the dough with the melted butter, then sprinkle with sugar.

Bake in preheated oven for about 25-30 minutes, until the crust is golden and the blueberries are bubbling.

Helpful Hack: If you’re pressed for time, you can bake the cobbler on a griddle over medium heat, flipping after about 10 minutes to ensure it’s cooked through.
