Griddle-Baked Blueberry Cobbler Welcome to the amazing world of griddle-baked cobblers! There are many flavor possibilities you can explore but in this particular recipe we’ll be focusing on a delectable Blueberry Cobbler. Enjoyed with a scoop of creamy Vanilla Ice Cream, topped with Whipped Cream and drizzled with Caramel Sauce this is the perfect summer dessert. Alternatively, if you’re looking for something a little more tart, you can use raspberries or blackberries and top with a freshly-made Lemon Curd.

-1 cup all-purpose flour
-1/4 cup granulated sugar
-2 tablespoons white sugar
-1/4 teaspoon salt
-3/4 teaspoon baking powder
-3 tablespoons cold butter, cut into small cubes
-1/3 cup (plus extra for brushing) milk
-2 cups fresh or frozen blueberries
-2 tablespoons butter, melted

Preheat oven to 375F (190C).

In a medium bowl, mix together the flour, sugar, salt, baking powder and butter until it resembles a coarse meal.

Stir in the milk to form a dough.

On a lightly floured surface, knead the dough a few times then roll out into a circle and press into a 8″ x 8″ baking pan (or other small baking pan).

Add the blueberries to the top of the dough and press in slightly.

Carefully brush the dough with the melted butter, then sprinkle with sugar.

Bake in preheated oven for about 25-30 minutes, until the crust is golden and the blueberries are bubbling.

Helpful Hack: If you’re pressed for time, you can bake the cobbler on a griddle over medium heat, flipping after about 10 minutes to ensure it’s cooked through.

-Make sure you keep an eye on the griddle-baked cobbler while it’s cooking over medium heat, flipping it over so it cooks evenly.
-To jazz it up with a few extra flavor punch, try adding a sprinkle of ground nutmeg or cinnamon to the top of the crumble topping.
-Serve warm with a scoop of Vanilla Ice Cream, a dollop of Whipped Cream and a drizzle of Caramel Sauce. Enjoy!
