Griddle-Roasted Fruit Kebabs Introduction

Welcome to Griddle-Roasted Fruit Kebabs – the tastiest and most tantalizing way to enjoy all the flavor of summer-ripe fruit! With simple ingredients and an even easier assembly and cooking process, these kebabs are sure to become a family favorite. Choose from sweet honey, coconut flakes, and chocolate syrup for the topping, or mix and match to your palate’s satisfaction!

Ingredients

• 2 cups strawberries, stemmed and quartered
• 2 cups pineapple, cut into 1-inch cubes
• 2 cups mango, cubed
• 2 cups kiwi, sliced
• 1 apple, cored and cubed
• Skewers
• ¼ cup butter, melted
• 2 tablespoons honey
• 2 tablespoons coconut flakes
• 2 tablespoons chocolate syrup
• Optional extra: whipped cream, or your favorite nut butters

Instructions

1. Preheat a griddle or skillet over medium-high heat.

2. Meanwhile, melt the butter in a shallow bowl. Brush a thin layer of the butter onto each of your skewers.

3. Begin to assemble your kebabs by threading one piece of each fruit onto each skewer.

4. Once your griddle is hot, place your fruit kebabs onto the surface and cook for about 8 minutes, turning once half way, or until fruit is cooked through and starting to caramelize around the edges.

5. Let the kebabs cool for a couple of minutes. Meanwhile, prepare a separate shallow bowl with the remaining melted butter, honey, coconut flakes, and chocolate syrup combines.

6. When kebabs are cool enough to handle, lightly brush them with the butter mixture before serving.

7. Serve immediately with your favorite whipped cream or nut butter.

Helpful Hack

You can easily customize your kebabs to your personal preferences by swapping out the original ingredients (strawberry, pineapple, mango, kiwi, and apple) for any fruits or vegetables you prefer – fresh or frozen! This especially works well if you’re grilling on a budget – use whatever is on sale or in season.

Tips & Suggestions

• For a quicker-cooking meal, try cubing the fruits and vegetables before threading onto the skewers.

• If you’re short on time or don’t feel like cleaning up after a griddle/skillet meal, you can easily make these kebabs in the oven at 350 degrees for about 15 minutes or so.

• Mix it up with your favorite flavor combinations and toppings – try different flavored syrups or adding a scoop of your favorite ice cream!
